Grilled Tuna Kebabs


You can use either double skewers or single skewers. Single skewers are easier to load, but the food rotates around them making them more difficult to turn. Double skewers are a little trickier to load, but the food stays on them better. If you are using bamboo skewers, soak them in water for an hour or more before cooking to help prevent them from catching fire on a hot grill.

Ingredients


* 1 1/2 pounds tuna, swordfish or sturgeon steaks
* 1 red bell pepper
* 1 green bell pepper
* 1 small onion (sweet if available)
* 6-10 large button mushrooms
* 2 lemons, cut into wedges

Marinade Ingredients


* 1/2 cup olive oil
* 2 Tbsp chopped onion
* 1 Tbsp chopped fresh rosemary
* 1 Tsp salt
* 1/2 Tsp black pepper
* 2 garlic cloves

Don't add vinegar or lemon to the marinade or you'll "cook" the fish!

Method


1/ Cut all the fish and veggies into similar-sized pieces; this helps everything lay flat when it is on the grill.

2/ To make the marinade, purée the onion, rosemary, garlic, salt and pepper in a food processor. Drizzle in the olive oil while puréeing, continue to purée until smooth, about 1-2 minutes. Coat the fish and veggies in the marinade. Set in the fridge for at least an hour and up to overnight.


3/ When skewering the fish and vegetables, pierce the fish against the grain, and select pieces of veggies that are close to the same size as your fish. This is important, because if the pieces are different widths, some things will be charred and others undercooked. You also want to be careful when loading up the skewers; it's easy to stab yourself by accident!

Alternate pieces of fish with pieces of various veggies, leaving a little space between everything. Don’t crowd the skewer, or the parts that are touching will cook too slowly.

Note that by threading the skewers with assorted veggies and fish, some things will be cooked more or less than others, as some things take longer to cook than others. If you want all of your items to be cooked perfectly, use a separate skewer for the onions, one for the tuna, one for the bell peppers, etc. Put the onions and bell peppers down first because they take longer to cook.


4/ Prepare the grill for high, direct heat. Clean the grates and wipe them down with a paper towel that has been dipped in vegetable oil. Lay the skewers on the grill. Don't move them until the fish pieces are well browned on one side, about 3-6 minutes. Then using tongs, carefully turn the skewers over and cook them until they are seared on the other side.

Serve hot or at room temperature. Drizzle with lemon juice or serve with lemon wedges.

You could use any meaty fish for these kabobs. Bon appétit... Everyone !

Kung Pao Chicken

Ingredients

* 2 large boneless, skinless chicken breasts
* 2 1/2 tablespoons of sesame oil
* 1 teaspoon of Szechwan peppercorns (optional)
* 8 red chili peppers
* 3 cloves of garlic
* 1 tablespoon of freshly grated ginger
* 6 green onions, chopped
* 2/3 cup of roasted, unsalted peanuts

For the marinade

* 2 teaspoons of soy sauce
* 1 1/2 teaspoons of sherry or Shaoxing rice wine
* 1 tablespoon of water
* 2 teaspoons of cornstarch

For the sauce

* 3 teaspoons of Chinkiang or 2 teaspoons of apple cider vinegar
* 2 teaspoons of soy sauce
* 1 teaspoon of sesame oil
* 1 tablespoon of water
* 3 teaspoons of sugar
* 1 teaspoon of cornstarch

Method

1/ Mix together the marinade ingredients. Chop the chicken into bite sized pieces and toss them in the marinade and set aside.

2/ Combine all the ingredients for the sauce, whisking well to ensure the cornstarch is fully incorporated. Set aside.

3/ Thinly slice the garlic. Break the chilies open and discard the seeds inside, then cut them into a few large pieces (the dish will already be very hot, keeping the seeds will make it near inedible).

4/ Place the 2 1/2 tablespoons of sesame oil in a wok or large saute pan and place over medium-high heat. Add the chilies and Szechwan peppercorns if using. Stir-fry for a few second until they become fragrant being careful not to burn them. Add the chicken, as soon as the pieces have separated add the ginger, garlic, and green onions. Stir-fry for a few minutes until the chicken is cooked through.

5/ Add the sauce and toss. When the sauce becomes thick add the peanuts, toss, and serve.

French Onion Soup


The trick to a great French onion soup is starting with good stock. French onion soup is usually made with beef stock. I've made delicious soup with stock from the leftover rib and chine bones of a rib roast. Another important element is the proper caramelization of the onions. Caramelizing onions take at least thirty minutes of slow cooking the onions over medium high heat. The browning, or caramelizing, of the onions brings out the sweetness in them.


Ingredients

* 6 large red or yellow onions, peeled and thinly sliced.
* Olive oil
* 1/4 teaspoon of sugar
* 2 cloves garlic, minced
* 8 cups of beef stock, chicken stock, or a combination of the two (traditionally the soup is made with beef stock)
* 1/2 cup of dry vermouth or dry white wine
* 1 bay leaf
* 1/4 teaspoon of dry thyme
* Salt and pepper
* 8 slices of toasted French bread
* 1 1/2 cups of grated Swiss Gruyere with a little grated Parmesan cheese


Method

1/ In a large saucepan, sauté the onions in the olive oil on medium high heat until well browned, but not burned, about 30-40 minutes (or longer). Add the sugar about 10 minutes into the process to help with the carmelization.

2/ Add garlic and sauté for 1 minute. Add the stock, vermouth or wine, bay leaf, and thyme. Cover partially and simmer until the flavors are well blended, about 30 minutes. Season to taste with salt and pepper. Discard the bay leaf.

3/ To serve you can either use individual oven-proof soup bowls or one large casserole dish. Ladle the soup into the bowls or casserole dish. Cover with the toast and sprinkle with cheese. Put into the broiler for 10 minutes at 350 degrees F, or until the cheese bubbles and is slightly browned. Serve immediately.

Asparagus

Ingredients


* 1 bunch of medium sized asparagus, about 1 lb
* 2 Tbsp of the most exquisite extra virgin olive oil
* 2 Tbsp freshly grated Parmesan cheese
* 1 teaspoon lemon zest - freshly grated lemon rind
* Salt and freshly ground black pepper

Method

1/ Prepare the asparagus by rinsing them thoroughly, break off any tough, white bottoms and discard. Cut into 1 to 2 inch sections, slicing the asparagus at a slight diagonal.

2/ Fill a medium sized saucepan half way with water, bring to a boil. Add the asparagus and reduce heat slightly to a simmer. Parboil the asparagus for exactly 2 minutes. Drain the hot water. While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind. Salt and pepper to taste. Serve warm or room temperature.

Note that when you are working with so few ingredients, it's important to make sure they are of the highest quality.

Steak Teriyaki


Flank or skirt steak is naturally tough, but the combination of marinating it in a homemade teriyaki marinade of mirin, sake, and soy sauce, along with a fast sear on high heat, and cutting thin slices against the grain, makes for a juicy, tender presentation.

You can either pan-fry or grill this steak, either way you'll want to sear it on very high heat. If pan frying, I recommend using a large cast iron frying pan or griddle pan.

Ingredients


* 1/3 cup mirin rice wine
* 1/3 cup sake
* 1/3 cup soy sauce (if cooking gluten-free, use gluten-free soy sauce)
* 1 Tbsp sugar
* 1 Tbsp fresh grated ginger

* 1 1/2 to 2 lb flank steak or skirt steak
* Olive oil or grapeseed oil

Method


1/ Combine the mirin, sake, soy sauce, sugar, and grated ginger in a large, shallow bowl. Place the steak in the marinade and let marinate for at least an hour, and up to 48 hours. If marinating for more than an hour, keep chilled until an hour before you plan to cook.


2/ When ready to cook, remove steak from marinade, reserving the marinade. Place steak on a plate and set aside. Place marinade in a saucepan and bring to a boil. Boil for 10 minutes, or until the marinade has reduced to a thin glaze, becoming your teriyaki sauce.

Please note that if you are concerned by the idea of reusing the marinade after raw steak has been sitting in it, you will be boiling the heck out of this marinade, killing anything that may have decided to grow in it during the marinating process. Also steak isn't the same as chicken. People eat steak raw (steak tartar). Salmonella is not a problem with steak; it is with chicken. If you are still concerned, make twice as much marinade, and reserve half to boil down to make the sauce, using the other half as a marinade.



3/ If grilling the steak, prepare your grill for high, direct heat. If pan frying, heat a large cast iron pan on high heat. If grilling oil the grill grates. Pat dry the steak. Rub a little olive oil or grapeseed oil all over it. Place the steak on the hot grill or pan. Sear for 3-5 minutes on one side, or until the side is well browned, and turn the steak over and sear the other side. Baste the steak with teriyaki sauce. When the steak is well seared on both sides, remove from the heat and let rest for 10-15 minutes.


4/ Notice the direction of the grain of the steak. It should like like striations in the muscle fibers of the steak. Slice the steak in half, following the grain of the steak so that you are slicing along the grain. (This will make it easier to make cuts across the grain.) Then make thin slices (1/4-inch) against the grain and on a slight diagonal. Slicing this way will break up the muscle fibers, making this naturally tough cut of meat quite tender.

If there are juices that run out of the steak as you cut it, add the juices to the teriyaki sauce. There's lots of goodness in the steak "jus" that you don't want to waste.

Arrange on a serving plate and pour the remaining teriyaki sauce over it.

Chả Cá Thăng Long

Vật Liệu

1. Riềng (1 củ)

2. Cá Catfish fillet, hoặc Basa fillet (5lbs)

3. Sour Cream, bột me hoặc yogurt (Ở VN thì dùng mẻ)

4. Nước mắm (khoảng 4,5 thìa soup)

5. Soupbase (khoảng ½ đến 1 gói) (cho tí bột ngọt vào cũng được)

6. Đường (khoảng ½ đến 1 tea spoon)

7. Bột nghệ (1/2 muỗng cafe)

8. Đậu phụng rang (1/2 LB)

9. Bánh tráng

10. Thì là (2 muỗng canh)

11. Hành lá

12. Hành hương

13. Hành phi

14. Bún


Cách Làm:


1. Cá fillet cắt miếng khoảng 1 inch

2. Riềng cắt mỏng rồi bỏ vô máy xay ra vắt nước (Ở VN chắc phải giã)

3. Sau khi vắt riềng ra nước, lấy ½ bã còn lại trộn vô với cá

4. Cắt phần trắng của hành lá và giã cùng với hành tím (khoảng nửa bát)

5. Trộn ½ bát hành cùng với sour cream, đường, nước mắm, soup base (1/2 gói), bột nghệ, nước riềng, chút bột me hoặc yogurt cho chua.

6. Sau khi trộn tất cả gia vị vô với nhau, nếm cho vừa ăn (phải có nhiều mùi riềng và vị hơi chua), đổ vô trộn với cá. Để một lúc cho gia vị thấm vô cá.

7. Xếp cá vô khay rồi bỏ vô lò nướng (broil). Khi thấy cá bắt đầu vàng thì trở mặt (nếu có cái vỉ nướng bánh cookie thì đặt trên đó càng tốt)

8. Cắt hành lá và thì là khoảng 1.5 inches (2 đốt ngón tay) trộn vô và bày ra đĩa.

9. Xếp cá lên trên đĩa và rải đều hành phi lên trên

10. Đun dầu nóng và rưới lên trên đĩa khi bắt đầu ăn để cho thì là và hành tái đi (đỡ hăng)

11. Luộc bún , rang đậu phụng để riêng

Vật liệu...

- 300g me chín bóc vỏ hoặc mứt me chua.

- 1kg cua, ghẹ chắc thịt hoặc tôm càng, tôm sú.

- 200g hành tây.

- Gia vị, dầu chiên. Ngò cọng.

Cách làm...
Làm me ...

Cho me với chút nước vừa đủ vào nồi nhỏ nấu tan me, lược qua rây bỏ xác hột, vỏ lụa, chỉ lấy phần cơm. Nếu dùng mứt me đặc có hột hoặc không cũng nấu tương tự với chút nước cho tan me ra để có thể vớt bỏ hột. Nếu dùng me trái đóng lon thì rút bỏ cuống, gân và hột nếu có, xay nhuyễn bằng máy xay với ít nước rồi cũng nấu lại, lượng nước sau khi nấu phải hơi sệt. Bắc lại nước me lên bếp, nếm thử, nêm từ từ đường vào, để có vị chua ngọt tùy khẩu vị. Tùy thích nấu nhiều hơn phân lượng đã cho để dùng khi rang tôm cua.

Làm tôm cua ghẹ.

CUA

* Dùng dao đâm yếm khi chưa tháo dây cột, để chết hẳn, tháo bỏ dây cột, dùng bàn chải chà rửa cua thật sạch, xả lại nước lạnh cho kỹ.

* Tách mai ra, cạo lấy gạch nếu có, nêm vào gạch một chút tiêu, xào với chút dầu phi vài tép tỏi cho thật thơm. Để riêng phần gạch đã xào. Lấy mai cho vào nồi hấp chín.

* Chặt làm hai, nếu con lớn chặt làm bốn. Dùng kẹp hoặc chày làm nứt càng lớn. Xốc đều với ½ muỗng cà phê muối + 1 muỗng cà phê đường + 1muỗng nhỏ tiêu.

** Tôm cua ghẹ là đổ biển, tự nó đã có vị rất mặn, lưu ý lượng muối.

TÔM

Dùng tôm sống còn cả vỏ, để nguyên con, cắt ngắn bớt phần râu.

* Hành tây chẻ tư, tách tép.

* Phi thơm khoảng 3 - 4 muỗng súp dầu với 3 tép tỏi đập giập, cho cua tôm vào, nhỏ lửa, nếu là tôm, chuẩn bị nắp chảo, sau khi trút tôm vào, nhanh tay đậy nắp lại để qua 1 - 2 phút cho tôm chết hẳn mới mở nắp, xào đều tay cho đến khi thấy vỏ cua tôm đổi màu ửng đỏ đều, cho gạch cua + phần nước me vào, hạ nhỏ lửa, tiếp tục xào cho đến khi thấy me quánh sệt lại, bám đều vào cua. Cho hành tây vào, đảo đều trong 1 - 2 phút cho hành chín là được.

** Đừng xào lửa lớn, me sẽ mau khô mà không thấm vào cua tôm. Sau khi xào, nước sốt me phải còn ở dạng sệt và bám đều vào cua tôm.
